Ebi Umani/Braised Prawn海老のうま煮

■Ebi Umani/Braised Prawn
【Ingredients】
6 prawns, unshelled with head
1 tablespoon Japanese sake
Salt

A ( 150 cc water
2 teaspoons Japanese sake
50 cc double concentrated sauce for noodle
1 tablespoon Mirin/sweetening made of Japanese sake  )

【Directions】
1、Cut off the tips of peak & tail, and barbels of prawns.
2、Bend the prawn, stick at the center of back with a skewer & remove a blood clump.
3、Stick a toothpick to the bended prawns to keep the shape, and sprinkle with the Japanese sake & salt.
4、Boil 3 in a pan for 1 minute, then drain in a strainer.
5、Boil A in a pan, add 4 & boil for 2 minutes. Cool down in the pan & remove the toothpick.
■海老のうま煮
【材料】
頭付き海老…6尾、酒…大さじ1、塩…少々
A(水…150cc、酒…小さじ2、めんつゆ(2倍濃縮)…50cc、みりん…大さじ1)

【作り方】
1、海老の頭の先とヒゲ、尾の先を切り落とす
2、海老を曲げ、真ん中あたりに串を刺し背ワタを取り除く
3、海老を曲げたまま楊枝をさし、酒、塩をふる
4、鍋に湯を沸かし、3を1分茹で、ザルにあげる
5、鍋にAを入れて沸かし、4を入れて2分茹で、そのまま冷まし、楊枝を取り外す
